Chocolate-Zucchini Snack Cake 15/28



Don't let the title fool ya! Just like there's carrot cake, there's zucchini cake and trust me, it's awesome!
First time I made this cake it flew off the table; i got back home after a long day looking forward to just indulge in this cake's goodness, there wasn't a piece left! So I made another, the same day :)
It's filled with heavenly chocolate.. now that I'm writing about it I feel like going and slicing me a piece!

6 huge mushrooms stuffed with onions, garlic, thyme, walnuts, bread crumbs and cheeese!! A pocket of awesomeness.

Spanish Shrimp with Garlic Sauce 12/28


This was an ultimate favorite meal! I adoooore shrimps no matter how they are presented, however, this dish.. was exquisite.

One thing about me is that I sometimes don't go by the book, and tend to play with the ingredients the way i want and almost every time it works out for the best ;)

This dish basically contains stir-fry bell peppers and onions, garlic and olive oil, shrimp with paprika and black pepper. The bell peppers and onions are the first to be plated, then the shrimps cook in the garlic-infused oil along with paprika and black pepper (I used both sweet and hot paprika) where they cook into a perfect color. I decided to reuse the flavorful pan to heat the already cooked brown rice; smoked perfectly!

Chicken Avocado Sandwich 11/28



This is a great meal. Although the ingredients might seem simple, but when they all come together they make it a great sandwich.
Well basically, there's avocado, chicken, lettuce, salsa and i add a bit of mustard. For the starch I used a flour tortilla which came perfect with these ingredients.

All you have to do is just cook the tortillas for one minute and then slice the avocados, and top them with the chicken, lettuce, salsa and mustard (there's cilantro but I decided not to use it); and there you have it!

Boring Day 8/28


Got nothing for this day.. Breakfast was a piece of scone with a cup of milk, Lunch was Penne Pesto with Artichokes and I kind of feel guilty that I didn't have dinner this day. I slept at like 7pm since I pulled an all-nighter the day before, and i skipped dinner. Ah well, less calories :p

Decided not to post uninteresting days from now on... (like this one, lol)

Lunch:
Turkey Panini with Avocado, Tomato, and Dijon - Yum!











Snack:
Cranberry-Walnut Scones (with a cup of skim milk)
They could use some sugar, but they're scones, and diet so :p
Still great for a snack!








Dinner:
Roasted Potatoes with Blue Cheese-Walnut "Butter"

Gotta love the little potatoes!

It's All About Food - Day 5/28


I had the honors of making the same pancake recipe for breakfast as last time, and I shared with my brother. He said that it was the best pancake he ever tasted! That's when I realized it wasn't only me.. and that's why I shall post the recipe and share it soon :)

For lunch, I had Baked Chicken Parmesan, and it was delicious. It's a chicken cutlet where you top it or season it with bread crumbs and pine nuts and Italian seasoning and then you put it in the oven. Ten minutes later you have to flip it (that was the best part because you get to see how crispy it gets on the outside) and top it with marinara sauce and then light mozzarella cheese and put it back in. When it's done, it looks perfect; the melted cheese and amazing smell!
As for dinner, I felt like having something light because by the time i got back home it was too late for a cooking mania. So I made Turkey Panini with Avocado, Tomato and Dijon. The toast was perfectly crisp, the avocado was perfectly ripe, and the combination altogether was just perfect.

Day 4/28


Cereal cereal cereal again for breakfast. It's the fastest express meal in the morning when you're rushing to get ready for classes. I had a great lunch!! Penne with Mushrooms and Artichokes. I'll definitely be cooking that again; the smell was so amazing that i felt I actually can taste it!
I always make snacks and I always forget to take any shot of them; probably because I'd be in such a hurry to attack them :P
Anyway, dinner was quite a rush. I made Roasted Potatoes with Blue Cheese-Walnut "Butter" for myself as well as my brothers. I had plans for the night, so I was in such a hurry to finish cooking so I can eat so I can go out lol. I hate this, no fun at all. I didn't have blue cheese so I replaced it with feta; I know.. I know.. not the same, but it was all I had in the fridge. This meal has great potential. I believe it could have went much better if I just had the time.

Day 3/28




Had quite an interesting breakfast this morning; Pancakes with Walnut Honey! Being completely fair here, these diet pancakes tasted even better than usual pancakes. The minute the first bite went it, i couldn't stop; they tasted like sweet clouds.




As for lunch, I had Herb-Marinated Beef and Mushroom Kebabs. Instead of going through the whole broiling process I just grilled them and they tasted great. However, I felt like they lacked some of taste or salt, and after I was done with my plate I realized that I forgot the most important ingredient; Pesto. (I'm still beating myself about it)

Anyway, dinner was quite special. I completely enjoyed my bowl of cereal =)
Adding to everything, I exercised for 70 minutes today (other than the daily set-ups) and it felt GREAT!!

Day 2/28




Ah well well well well.. Let's begin with what I had for breakfast. I kind of got bored of the usual cereal scenario so I made up my own breakfast this morning (which you can also check on my Recipes page). It's basically Natural Peanut Butter (the MUFA that I should eat) with Rice Krispies topped off with strawberries, and a cup of milk on the side :)

For lunch, I had yesterday's leftover pizza (which was basically just whole wheat crust topped off with tomatoes, basil and a bit of mozzarella), as for dinner.. I cut up 3 tomatoes topped them off with olive oil a pinch of salt and black pepper and shoved them in the oven. While they were cooking I grilled a piece of chicken; I don't really know why I decided on this recipe, I'm not such a big fan of tomatoes. Anyway, I ended up eating the chicken but leaving the tomatoes behind. I shall learn not to make that mistake again.

Day 1 out of 28 (Stage 2)


Yayayay! Today was different! and a lot more delicious, yumyum. I was supposed to wake up an hour earlier than usual today to prepare for my pancake breakfast but of course I got lazy. Realized that I didn't have time to prepare anything so I just had cornflakes with raisins and a tablespoon of, wait for it, wait for it... Peanut Butter!! I'm allowed 2 tablespoons but I only felt like having one.

For lunch, I got back home and made grilled chicken with balsamic sauce.. the sauce was great, and so flavorful, I enjoyed it. However, I got back to school finished class and then came back home and prepared Dinner!! PIZZA! (diet style pizza lol) Not allowed to put salsa, just tomatoes, basil and mozzarella. The crust was whole wheat which was something quite different according to me, but I can't complain, it was a great meal after-all! Don't forget the Snack!! I made the brownies recipe, yumyum! They're also diet, but they were damn good.. with chocolate chips and walnuts, and I'm allowed half a cup of low fat vanilla icecream on the side! It just felt great.

Finally I'm going to bed now with a satisfied stomach :P

Day 4


I'm not going to write much about today because it's one of those boring days where there's nothing to talk about. Even the meals of today were the same as one of the 3 days before, so it doesn't really matter; same old same old, bla and bla.

Anyway, just for the sake of updating, I went grocery shopping for tomorrow's meals :D and I wont be revealing anything until tomorrow night =)

Day 3


I have to admit, today was awfully depressing. The only meal I enjoyed was the cornflakes with raisins in the morning. After that I got really hungry and ate a tiny grilled chicken with mushrooms, and was still hungry. A couple of hours later, I had a smoothie, pineapple flavor. Medicine tasted much better, so I threw it out and starved to death until dinner time. Anyway, dinner tonight was the same dinner as day 1,wasn't much satisfying but it went well.

I can't wait till tomorrow is over so I can start cooking and eating like normal people. This anti-bloating stage is hell!!

I almost got a schedule set up for what meals to cook next week, it sure will be a challenge :)

Day 2


Only one day has passed and I already feel light, probably because food has always been there for me :p Now it's just a lonely growling stomach.

Anyway, I had Rice Krispies and skim milk for breakfast along with 3 slices of pineapple. For lunch, I ate half a can of tuna with steamed baby carrots. For dinner however, I was invited over my cousin's place where my uncle made what seemed to be deliciously homemade Burgers; oh yes my nose can taste now.

I had to sit there and sip my water while they attack their Over-Sized Burgers, and that's not where it ends. A great night is never great without dessert! Everybody came in with a perfectly molten chocolate cake with 2 vanilla scoops on the side, and of course, I had to sit and watch. Everyone kept nagging that it's just one day, and that it wouldn't hurt to eat; that's when I realized that I have one hell of a will to go through this the right way.

After I went back home, I grilled my piece of chicken (which was only 85 grams), prepared my half cup of brown rice, along with a cup of sauté'd mushrooms and munched awaaay!

I just crunched and made a couple of sit-ups (at 2am in the middle of the night); decided to do that almost everyday. (yeah right)

Day 1


The 4 day stage: The first four days are the most difficult, you have to eat exactly what they ask you to eat and you're not allowed coffee, tea, gum etc.. basically anything other than what they allow; except for water of course. Oh speaking of water, during these first four days, water that I should drink is called Sassy water which is basically water with cucumber, ginger, lemon and mint leaves; pretty much irritating. Anyway, the reason behind these 4 days is to pretty much purify the body, and I think it's working perfectly.

Ah well, today was my first day and let me say, there was a lot of hunger in the air. For breakfast I was allowed a cup of cornflakes and skim milk with half a cup of unsweetened apple sauce.. and that apple sauce wasn't pleasing. For lunch, around 7 slices of deli turkey, a slice of low fat string cheese and grape tomatoes ( I omitted the tomatoes because I'm not a huge fan).

Every Thursday in my world is a Thursday night movie ritual, and what i enjoy most about that day were the snacks, all the candy, the popcorn, and the huge ass Pepsi! Because I'm so lucky, today is Thursday and I didn't get to enjoy any of those :( Instead I made and took with me my Smoothie that was considered a snack which was tasteless with a zero % of sugar. Anyway, dinner on the other hand was a bit more satisfying, though I'm still feeling a bit hungry, shhh... I had fish about 113 grams, cooked green beans (oh yummy), and a teeny tiny weeny roasted red potato.

Well, I got through the first day, 3 more for stage 1 and 28 more for stage 2!

Getting Started


Well, after thorough search in several Libraries I was able to get my hands on the book Flat Belly Diet. I heard about it on Doctors and it seemed very interesting so I said to myself what the heck I'll give it a try!

For people who know it already, you know that it includes several steps before you can actually start. Consider grocery shopping for example, there's a whole list of things to get before you can actually start the diet, which according to me, is kind of exciting. Along with the original diet book i bought the Flat Belly Diet Cookbook, I honestly can't wait :D Man i love cooking, and now I get to cook without getting fat! (more like getting thinner) Yipee!!

What could be a problem for me would be the fact that I have uni every day, so I'm gonna have to manage my time and organize everything. Anyway, I've got my fingers crossed, and because I'm too excited about this, I'm gonna make it happen!

My first day shall be after tomorrow. I've only bought the book tonight, tomorrow I have to go through a whole shopping list, and the day after that I shall be ready!

Brace yourselves! (more like brace myself, because there's probably just me here :) )
