For lunch, I had Baked Chicken Parmesan, and it was delicious. It's a chicken cutlet where you top it or season it with bread crumbs and pine nuts and Italian seasoning and then you put it in the oven. Ten minutes later you have to flip it (that was the best part because you get to see how crispy it gets on the outside) and top it with marinara sauce and then light mozzarella cheese and put it back in. When it's done, it looks perfect; the melted cheese and amazing smell!
As for dinner, I felt like having something light because by the time i got back home it was too late for a cooking mania. So I made Turkey Panini with Avocado, Tomato and Dijon. The toast was perfectly crisp, the avocado was perfectly ripe, and the combination altogether was just perfect.
